How to cook beef and coriander curry


The ingredients

Heat some olive oil in a saucepan

Add onions and fry

Soon after add the garlic

Add the beef before the onions brown

Cook the beef until the outside has seared

Add two cups of boiling water

A pinch of salt

A few bay leaves

Then tomato paste until sauce thickens

Add the two and a half table spoons of garam masala

Throw in 3 coriander roots for taste

Add eggplant chunks

Cut open the chilli to help it infuse and then throw it in

Let the curry simmer on low heat for 45 minutes if it is on high heat the meat will be tough

Add coriander leaves

Discard any coriander roots as they have already infused the curry and do no longer provide flavour

Add coriander leaves and yogurt for taste Papadums and roti bread is optional but recommended Note this dish is better a day after it is made
